Philly Cheesestake
(Serves 4)

1lb wagyu ground beef
4 8-inch flour tortillas
2 green peppers, thinly sliced
1 large onion, thinly sliced
Salt and pepper

Cheese Sauce:
½ cup heavy cream
6oz sharp cheddar cheese, grated
2oz Velveeta cheese, cubed

Make the cheese sauce: In a small pan, heat the cream until just boiling and stir in the two cheese. Continue to stir until thickened. Keep the sauce warm using the XLO function.

Heat the Thermador Pro Range Griddle to high heat.

Portion the ground beef into 1/4lb balls.

Saute the onions and peppers on the griddle until caramelized. Season with salt and pepper, and set aside.

Place a ground beef ball on the griddle and season with salt and pepper. Place a flour tortilla over top and press down on the burger until you get a nice char. Cook for 1 to 2 minutes to desired doneness and flip over so the tortilla side is down.

Top the burger with the onions and peppers, and spoon over some of the cheese sauce.

Fold the tortilla over, and transfer to a serving platter.
