Jalapeno Caesar Dressing

4 anchovy fillets
2 small garlic clove
2 large egg yolks
2 tablespoons fresh lemon juice, plus more
1tsp teaspoon Dijon mustard
2 tablespoons olive oil
½ cup vegetable oil
1/4 cup finely grated Parmesan
1 Jalapeño, remove stem and cut in half, Grill for 2 minutes per side
Freshly ground black pepper


In a food processor, add the anchovy fillets, garlic, grilled jalapeño, pinch of salt and blend until well incorporated. Add the egg yolks, 2 tbsp. lemon juice, and mustard. Keep blending the mixture as you start adding in olive oil, then very slowly start adding the vegetable oil; blend until dressing is thick and glossy. Once the dressing has thickened add in Parmesan. Season with salt, pepper, and more lemon juice, if desired.
