Gremolata


Yield: 1 cup | Prep Time: 20 Minutes

Ingredients:

3 Garlic cloves, minced
4 tablespoons Pine Nuts
1 bunch Cilantro, blanched
1 bunch Parsley, blanched
2 ounces Parmesan, finely grated
1/2 Shallot, cut into quarters
3 tablespoons olive oil
Kosher salt

Method:

Preheat oven to 350 degrees farenhiet.

Toast pine nuts on a small baking sheet until golden brown, about 5 minutes. Remove and let cool. In a food processor add the blanched cilantro, parsley, garlic, pine nuts, olive oil and shallot. Blend until the mixture is finely chopped and comes together as one. Transfer to a small bowl and stir in Parmesan. Season with salt and pepper to taste.
