Watermelon Gazpacho Soup with Grilled Asparagus, Fresh Dill and Feta


Yield: 6-8 People | Prep Time: 25 Minutes

Ingredients:

2 large tomato, remove core, cut into quarters
1/4 cup Red Onion, small dice
1 Serrano Chile, remove top
2 cloves Garlic, root removed
1 Medium sized Watermelon, skin removed and cubed
1.5 tbsp red wine vinegar
1/2 cup extra-virgin olive oil
1/2 bunches Asparagus, bottoms trimmed, asparagus grilled
1 cucumber, seeded and minced
1/4 cup of fresh dill, plus 1 more for garnish
Kosher salt and freshly ground black pepper
Crumbled feta cheese

Method:

In a large pot add the tomatoes, watermelon cubes, garlic and chile. Blend the mixture until smooth using a blender or stick blender. Next add the red wine vinegar and olive oil, and 1 bunch dill - blend until incorporated. Once all the blending is finished add the cucumber. Season with salt and pepper to taste. Serve - Garnish with feta cheese and fresh dill sprigs.
