Pepper Relish

Pepper Relish

Yield: 1 cup | Prep Time: 10 minutes | Cook Time: 25 minutes


  • 1 cup Sugar 

  • 1 Red Pepper - seeded and cut into small dice 

  • 1 Yellow Pepper - seeded and cut into small dice 

  • 1/4 cup Red Onion 

  • 3 Garlic Cloves - minced 

  • 2 tbsp Whole Mustard Seed 

  •  3 tbsp Apple Cider Vinegar

Place sugar into a medium sized pan. Place over medium heat on a stove top. Cook the sugar until it turns into beginning stages of caramel (light golden brown, liquid), do not stir. Once the sugar is liquified add the onions, mustard seeds, peppers and garlic. The sugar will turn hard, just keep over the heat and stir occasionally until the sugar starts to liquify again. Cook over medium low heat for approximately 10 minutes then add the vinegar and cook for 5 more minutes. Remove and place into a baking tray, place into a fridge and let cool completely.
