Cauliflower and Porcini Puree

Cauliflower and Porcini Puree

Yield: 500 ml

Prep Time: 15 minutes

Cook Time: 25 Minutes 


1 head of Cauliflower, cut into florets and steam for 15 minutes

1.5 cups of 35%

Cream 3 tbsp Unsalted Butter

50 grams Dried Porcini, add to blender and pulse till dust

Salt and Pepper


In a medium size pot add steamed cauliflower, cream, butter, porcini dust, salt and pepper. Bring to a simmer and cook for 10 minutes. Add contents to blender and blend until silky smooth. Place content in a clean pot and place back over low heat, keep warm.
