Rack of Lamb

Ingredients: 1 Rack of Lamb (New Zealand or Canadian), Bones cleaned and any sineu removed


2 tbsp unsalted Butter


1 sprig of Rosemary


2 Garlic Cloves Crushed


2 tbsp Olive Oil


Method:


Preheat oven to 400 degrees fahrenheit.


Place a large skillet over medium high heat. Add olive oil and wait till pan starts to smoke. Reduce temperature to medium. Season both sides of lamb with salt and place in skillet fat side down first. Sear until the rack of lamb is golden brown then flip on to opposing side. Add butter, rosemary sprigs and garlic cloves. Allow the butter to melt and brown. Using a spoon, baste the rack with the residual fat in the pan for about a minute, making sure to maintain the heat in the pan. If the pan is oven ready, place the whole rack with the pan in the oven and cook until the internal temperature reads 125 degrees fahrenheit. Remove and let cool for 10 minutes. Cut and serve right away.
