Steamed Cod Paupiette

Yield: 4 People


4 6oz portions of Cod or Halibut

1 Yellow Zucchini - Cut into Coins
1 Medium Size Heirloom Tomatoes - Cut into Coins
1 White Onion - Cut into Coins
1 Fennel - Cut into Half and Sliced Length Wise

1/2 cup Butter - room temperature
1/4 cup Chopped Dill


Preheat oven to 350 degrees fahrenheit.

In a bowl add the butter, dil and salt. Mix together using a whisk. Spoon the mixture out onto a sheet of plastic wrap and roll into a log - tighten ends so nothing falls out the sides. Place in fridge and cool for 30 minutes. Remove from fridge and discard the plastic wrap. Cut coins out of the butter.

Cut 4 5”x5” squares of parchment paper. Starting at the bottom and seasoning with vegetable oil, salt and pepper on each level. Place a slice of onion, then tomato, zucchini, fennel and finally the fillet of fish. To fish off add a coin of the dill butter and close the parchment paper up. Gripping all corners and bringing towards the centre tighten by scrunching the edges together and rolling so they don’t come loose. Place on a tray and put in the oven for 9-10 minutes or until the fish is fully cooked.

Remove and serve right away.
