Kale Salad w/ Strawberry, Avocado, Craisins & Lemon Poppy Seed Dressing

Ingredients:

4 cups chopped kale, stems removed
1 cup strawberries, hulled, quartered
1 avocado, cubed
1/3 cup craisins
1/3 cup sliced almonds
¼ cup herb and garlic goat cheese, frozen

Dressing:

1 tbsp olive oil
1 tbsp vegetable oil
2 tbsp fresh lemon juice
1 tsp lemon zest
1 tsp honey
1 tsp poppy seeds
¼ tsp sea salt
¼ tsp fresh cracked black pepper

Method:

In a large bowl massage kale with a pinch of sea salt for 15-20 seconds. Add in the strawberries, avocado, craisins and almonds and toss gently.

In a blender or a mason jar combine ingredients for dressing. If using a blender wait until after blending to add poppy seeds. Blend/shake until ingredients have emulsified.

Remove goat cheese from freezer and finely dice, add to salad reserving some or garnish. Pour dressing over salad, gently toss once and serve with remaining goat cheese on top.
