Organic Cocoa Brownies with Porter Beer Caramel Glaze


Yield: 32 squares | Prep time: 50 min

1 cup butter
2 cups white sugar
3 eggs
2 tsp vanilla extract
2/3 cup unsweetened organic cocoa powder
1 cup all-purpose flour
½ tsp salt
½ tsp baking powder

Caramel:
12 oz Great Lakes Brewery Porter
1 cup brown sugar
1 tsp vanilla extract
2 tbsp unsalted butter
¾ cup heavy cream

-Preheat oven to 350°F and line a 9x13 cm baking pan with parchment paper.
-In a saucepan on medium heat, melt butter. Remove from heat and whisk in sugar, eggs and vanilla. Whisk in remaining ingredients and evenly fill baking pan.
-Bake for 30 minutes or until a toothpick or knife comes out clean when brownies are pierced.
-Remove from heat and let cool.
Caramel:
-In a saucepan, bring beer to a boil and reduce by half, approximately 6-8 minutes. Add brown sugar and stir constantly until fully incorporated, approximately 2 minutes.
-Add vanilla and slowly whisk in butter and heavy cream. Reduce to form a sauce.
-Use a pastry or silicone brush to apply caramel to brownies or simply pour over brownies and spread with a butter knife or the back of a spoon.
