Lemon Roasted Asparagus

1 lb thick green asparagus spears

1 tbsp olive oil

2 garlic cloves (minced)

1 tsp lemon zest

Salt and freshly ground black pepper to taste

1 tbsp fresh lemon juice

 



Preheat oven to 420°F.



Trim and wash asparagus. Toss in olive oil, garlic, lemon zest, salt and pepper.



Spread asparagus onto a standard baking tray or sheet and roast for 5 minutes.



Set asparagus aside for approximately 3 minutes before drizzling with lemon juice.
