Cauliflower Truffle Pureé

¼ cup butter

1 tsp vegetable oil

1 white onion (roughly chopped)

4 garlic cloves (minced)

1 medium cauliflower (roughly chopped)

2 cups milk

½ cup heavy cream

1 tsp honey

1 tsp lemon zest

2 tsp white truffle oil

Salt and fresh ground black pepper to taste


 


- Heat a large saucepan or medium-sized pot over medium heat; melt butter and add vegetable oil.


- Sauté onion until translucent; add garlic and sauté for 1 minute.


- Add cauliflower, milk and cream. Reduce heat and simmer for 15 minutes.


- Add honey and lemon zest. Remove from heat and purée using a hand blender. Add truffle oil, and salt and pepper to taste.


- Tip: For a silky consistency, pass purée through a fine sieve before adding truffle oil and seasoning with salt and pepper.
