Caramelized Onion Dip

Caramelized Onion Dip

3 cups chopped yellow onion

1 cup chopped red onion

2 teaspoons brown sugar

2 tbsp white balsamic vinegar

1 cup sour cream

½ cup mayonnaise

¼ teaspoon Worcestershire sauce

¼ tsp garlic powder

1 tsp lemon zest

1 tbsp finely chopped parsley

2 tbsp vegetable oil

salt & freshly ground black pepper

Heat oil in a large thick-bottomed pot on medium heat. Add chopped onions, salt and pepper and cook until translucent, about 6-7 minutes.

Reduce heat to low-medium and stir in brown sugar and balsamic vinegar.

Stir occasionally and cook for 25-30 minutes or until caramelized. If the mixture begins to stick too much to the bottom of the pan and may burn add a tbsp of water.

Remove from heat when fully caramelized. Combine with all remaining ingredients to create a delicious dip and serve with potato chips.
