Smoked Bacon Red Potatoes w/ Rosemary & Garlic


1 kg red potatoes (halved)
¼ cup olive oil
8 strips of bacon
4 garlic cloves skin on
4 sprigs of rosemary
½ tsp salt
¼ tsp black pepper
1 tbsp Dijon
1 tbsp white balsamic vinegar
zest of 1 lemon

Toss potatoes with olive oil, salt and pepper and place in a baking tray lined with parchment paper. Bruise the rosemary sprigs and add them to the tray with the garlic cloves. Bake at 400F for 15-20 min or until fork tender. In the meantime fry the bacon until done in a frying pan on medium heat and remove to paper towel. Crumble bacon, and set aside.

While potatoes are cooling retrieve the garlic cloves and crush them into a paste using a fork. Mix together with Dijon, white balsamic, lemon zest and re-toss potatoes with bacon crumble. Discard rosemary sprigs or leave them for presentation.
