Pumpkin Spiced Challah French Toast


8 slices challah/egg bread
4 eggs
¾ cup milk
½ cup pumpkin puree
2 tbsp brown sugar
1 tsp cinnamon
1 tsp salt
¼ tsp ginger, nutmeg, clove
2 tsp vanilla extract
2 tbsp vegetable oil

In a mixing bowl combine eggs, milk, pumpkin, sugar, spices, salt and vanilla and whisk thoroughly. Pre-heat a large frying pan or griddle to no more than medium heat. Coat surface with vegetable oil in between each batch. Lightly dredge each slice of bread in the mixture then fry until golden brown on both sides, approx. 4-5 minutes.
