Layered Ratatouille w/ smoked Mozzarella & Crisp Chorizo



Ingredients:
2 cups homemade or gourmet store bought chunky tomato sauce
5 roma tomatoes (extra firm)
1 green zucchini
1 celeriac bulb
1 yellow zucchini
1 Japanese eggplant
1 chorizo sausage
¾ cup smoked shredded smoked mozzarella
1 tbsp chopped parsley (garnish)

Seasoning:
2 tbsp olive oil
1 tbsp herbes de Provence
2 tsp minced garlic
1.5 tsp coarse salt
1 tsp coarse ground black pepper
1 tsp red chili pepper flakes

1. Finely dice chorizo and sauté in a frying pan on medium heat until it just begins to crisp. Using a slotted spoon or a strainer remove chorizo from oil and allow to rest on paper towel, add oil to tomato sauce and mix.
2. Combine seasoning ingredients and place aside.
3. Using a mandolin or a very sharp knife slice all vegetables into 1/16” rounds.
4. Using an oval baking dish pour in the tomato sauce and evenly distribute the cheese a top, even out the surface.
5. Begin to layer your vegetables interchanging and overlapping them such that only the tip of the previous vegetable slice is visible. Repeat this process until the dish is full.
6. Pour or brush the seasoning mixture across the top of the vegetables.
7. Bake covered for 35 minutes at 350F and uncovered for 10 minutes
8. Remove and allow to rest for 10-15 minutes prior to serving.
9. Top with the crisp chorizo and fresh chopped parsley
