Strawberry Gazpacho w/ Spiked Cucumber & Basil infused Crème Fraîche



Ingredients:

6 cups hulled Ontario strawberries
1 cup de-seeded & roughly chopped red pepper
1 cup de-seeded, peeled and roughly chopped English cucumber
½ cup de-seeded, peeled and diced English cucumber
½ de-seeded and roughly chopped jalapeño
1 roughly chopped shallot
1 garlic clove
2 tbsp fresh lime juice
2 tbsp red wine vinegar
1 tsp olive oil
1 ¼ tsp sea salt
¼ tsp white pepper
¼ cup crème fraîche
3 large basil leaves

Method:

1. Combine olive oil, 1 tbsp of lime juice, diced cucumber and ¼ tsp of salt in a bowl, mix and refrigerate for up to 4 hours.
2. Place all ingredients and 1 tbsp of lime juice in a blender. Blend until smooth then pass through a fine chinois strainer, refrigerate until completely chilled.
3. Finely slice basil into crème fraîche.
4. Ladle or pour gazpacho into individual serving bowls and top with a dollop of crème fraîche.
