Blackberry Balsamic Lemon Zest Vinaigrette

Blackberry Balsamic Lemon Zest Vinaigrette

1 cup olive oil
½ cup balsamic vinegar
2 tsp Dijon
2 tsp lemon zest
1 tsp honey
¼ cup fresh blackberries

Combine all ingredients in a blender and blend. Slowly drizzle in oil and emulsify the vinaigrette. Once desired consistency is reached add salt and pepper to adjust the seasoning to your liking.

Tips: When making any vinaigrettes the rule of thumb is 1 part of acid to to 2.5 parts oil. For example. 1 tbsp champagne vinegar to 2.5 tbsp ground nut oil.

If the vinaigrette is too runny blend in more oil, if it is too thick blend in more acid or water if it is already acidic enough.

Add fresh herbs such as basil, thyme and oregano etc. to give a fresh kick.
