Roasted Red Peppers & Jalapeños


This recipe for roasted red peppers and jalapeños is so simple but so versatile and useful. These roasted delights can: liven up salads, stuffings, pizza toppings, sandwich toppings, soups, stews, pasta dishes, the list is endless! Store them in airtight jars with extra virgin olive oil.

4 red bell peppers
4 jalapeños
12 long wooden skewers
2 cups extra virgin olive oil

Turn on the gas range to a medium heat flame.
Insert 2 skewers into each pepper vertically.
Insert one into each jalapeño vertically.
Hold the peppers and jalapeños separately over burners directly in the flame and allow to char evenly.
Place peppers and jalapeños in respective bowls and cover with saran wrap for 15 min
Remove peppers and jalapeños and rub away skin, have a bowl of water nearby to clean your hands.
Remove seeds from each and store in extra virgin olive oil in an airtight jar.
