Beer And Cheese Soup


1 onion
5 tbsp butter
1 L Chicken Stock
1/2 cup white wine
1 cup of ale or a dark beer
1 cup milk
4 tsp corn starch
1 cup cheddar cheese
1 cup grated parmesan cheese
1/2 cup croutons

In a medium sized pot on medium heat melt the butter and then sautée the onions until they are translucent. Stir in the broth and the wine and bring to a gentle boil. Remove some of this water from the pot to a small bowl and whisk in the corn starch, this is called a slurry. Add the slurry back to the pot whisking constantly for 1 minute. After a few minutes of boiling reduce the heat to low-medium and gently whisk in the milk, grated cheeses, beer, salt and pepper. Reduce the heat to low and stir until the cheese has melted. Serve in bowls with your favourite croutons, a good idea would be to add bacon bits or lardons on top of the soup.
