Lemon & Honey Roasted Chicken w/ Braised Grapes.


1 4-5 Lb. chicken (cut into 10-14 pieces)
1 cup red or green seedless grapes
1.5 tbsp fresh lemon juice
1 tbsp honey
1 tbsp thyme leaves
1 tsp rosemary leaves
3 cloves garlic (crushed)
2 tbsp olive oil

Pre-heat oven to 425F and line a rimmed baking sheet with foil. Take your cut chicken and place in a bowl. Drizzle with 1.5 tbsp of olive oil, fresh lemon juice0 and honey. Add garlic, thyme, rosemary, salt, black pepper of your choice and massage the meat.

Brush the pan with the remaining olive oil and lay the chicken at least an inch apart skin side up. Roast for 15-20 minutes until brown, then add your grapes all in between the pieces and continue roasting for another 15-20 minutes until golden brown and the chicken is cooked. If you have a thermometer the chicken should hold a temperature of 74C or 165F.

Serve this delicious dish on top of your favourite grains and be sure to drizzle with the pan drippings.

***Tips for baking chicken***

-when baking chicken parts, select pieces that are labeled as young, fryer/broiler for baking. If roasting the whole chicken select capons or roasters.

-Add a tbsp of butter to the pan once you remove it from the oven, this will kick up your drippings a notch.

-if you do not own a thermometer, the chicken is done cooking when it is pierced and the juices run clear.
