Simple Spiced Coffee Cake


1 cup all purpose flour
1 cup brown sugar
1 1/2 tsp of dry instant coffee
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp all spice
1/4 tsp ginger powder
1/8 tsp mace
1/2 tsp salt
1/4 cup butter
1 egg
1 cup sour cream
1 tsp baking soda
1/2 cup of chopped pecans and walnuts (optional)

Preheat oven to 350F. Combine flour, brown sugar, coffee, spices and salt. Cut in the butter until the particles are the size of large peas. In a bowl beat the egg and stir in sour cream and baking soda. Pour all at once into dry ingredients mixing it just enough to dampen. Spread the batter into a greased and floured 9" square pan. Sprinkle the top with nuts. Bake in the oven for approximately 40 minutes or until a toothpick inserted comes out clean.


***Tips for baking coffee cakes***

-Do not over mix your batter, by doing this you will develop the gluten which in turn will make the texture of your cake tougher and not as moist and fluffy.

-Coffeecakes are best served warm

-Store your leftover coffee cake at room temperature, and reheat leftovers at 300F for 10 minutes.
